This coconut lime rice with cilantro and black beans is the perfect summer side dish that’s ready in 15 minutes with only 5 minutes of prep. Make it a meal with a few yummy additions like jalapenos, radishes, and avocado.




Toss the rice, coconut milk, water, lime zest, coriander and saltĀ  in a pot and bring to a boil.

Reduce heat and simmer covered for 10-15 minutes or until cooked.

Remove from heat and let cool for about 5 minutes before adding the black beans – mostly so they don’t stain the rice.

Serve with protein or garnishes of your choice.
