Rustic Tomato & Goat Cheese Galette

This rustic galette makes an elegant statement for very little effort. It features the classic Italian flavours of zesty roma tomatoes, creamy soft goat’s cheese, sweet onions and earthy herbs.

Ingredients

  • 1 package of pre-made puff pastry
  • 125 grams soft goat cheese
  • 3–4 roma tomatoes
  • 1 small red onion
  • 1/2 tsp each of dried basil and oregano
  • 1 egg for egg wash (optional)
  • A small handful of fresh basil leaves for serving (optional)

Instructions

  • Preheat oven to 185 C / 375 F
  • Slice the tomatoes and onion thinly
  • Put the tomatoes in a bowl and salt them lightly. Set aside for 5 minutes so they release excess liquid
  • Spread out the pastry sheet, arrange the drained tomatoes, onions and crumbled goat cheese in the centre and sprinkle with dried herbs
  • Use your fingers to pull the edges of the pastry in towards the middle, tucking in

  • Egg wash (optional)
  • Bake for 25 – 30 minutes or until pastry is golden
  • Serve with fresh basil (optional)
